Fabulously delicious apple butterscotch bars

I can smell these coming out of the oven already… if you love apples, the combination of it added to butterscotch and sugar, is delightful!  You are in for a real treat!  These are so good, enough said…now, go try them~

Ingredients:
3 cups of granny smith apples peeled and diced  (any kind of apples can be used, but I like the tartness of granny smith)
1 ½ cups sugar
½ cup of light brown sugar
2 eggs
3/4 cup vegetable oil
2 ½ cups flour
3 ¾ teaspoon of baking powder
1 teaspoon salt
1 teaspoon cinnamon
½ teaspoon of nutmeg
3/4 cup butterscotch chips

Method:
Preheat oven to 350 degrees.
Combine sugars, eggs and oil.
In a separate bowl, combine flour, baking powder, salt and cinnamon.
Add to mixture to liquid ingredients and stir until combined - mixture will be THICK! (Don't worry, it's suppose to be like that)
Add apples.
Spread into a greased 9 x 13 in pan.
Sprinkle with the butterscotch chips.
Bake for 35-45 minutes, or until lightly golden brown.
Cool completely, then slice into bars.
Serve with a good cup of coffee or milk... and invite me over!
